New Cookie Recipe FilAm Dessertation

FILIPINO AMERICAN DESSERTATION:  SWEET AND YUMMY  DESSERTS IN THE PARTY TABLE.  Baking inside the labyrinth, guaranteed freshness and 10,000 taste buds become one big delicious flavor.  Recipes by Prescy and Susan who said "baking is an exact science."


Leche flan



4 whole eggs
4 egg yolks
1 can condensed milk
1 cup evaporated milk
1/2 cup sugar (optional)
1 tsp vanilla
1/2 cup water


1 cup brown sugar and 1/2 cup water } caramelized


Puto (Steamed Rice Cake)



2-1/3 cups Bisquick
3/4 cup white sugar
1 cup whole milk
3 large eggs

Blend together pancake mix and sugar.  Slowly add milk and beat in egg.  Blend well.  Put in muffin pans or cups.  Place inside a larger saucepan with an inch of water.  Cover saucepan and steam for 20 minutes or until done.


Kutchinta

1 cup all purpose flour
2 cups water
1 cup brown sugar
1/2 cup white sugar
1 tbsp. lye water

Mix and cook by steam in muffin pan


Ube



1 kilo ube yam root (boiled and grated) or ube powder
1 can evaporated milk
2 cans condensed milk
1/2 cup butter or margarine
1/2 tsp. vanilla

Melt butter, add condensed milk and vanilla.  Mix well.  Add ube, adjust the heat to low.  Keep on mixing, add evaporated milk.  Let cool and place on a platter.  Refrigerate before serving.


Maja Blanca

1 bag corn flour
1 can cream of corn
1 corn starch
sugar
1 big can of gata


Puto Maya



small package of sweet rice
1 tsp. salt or less
4 - 5 tsp.sugar
1 can coconut milk



Brazo de Mercedes


Ingredients:

10 egg whites
1-1/4 cup sugar
1 tsp cream of tartar

Beat egg whites until stiff.  Add cream of tartar.  Add sugar little by little and continue beating until smooth.  Pour on a baking sheet lined with greased and floured wax paper.  Bake in an oven 350 F until brown.  Remove from oven and if other side is not brown, invert it in another baking sheet with greased and floured wax paper.  Bake again until top is brown.  Remove from oven and invert it into a piece of wax paper which has been dusted with confectioners sugar.  Spread filling on top and roll.  Chill.

Filling:

10 egg yolks
1 can evaporated milk
1/2 tsp. lemon rind or 1 tsp. vanilla

Put above ingredients in a double boiler and cook until thick

or

10 egg yolks
3/4 can condensed milk
1/2 tsp. lemon rind
1/4 cup butter

Blend above ingredients except butter and cook in a double boiler until thick.  Add butter before removing from fire.



Cassava Pudding




2 packs cassava
3 cups water
3/4 cup Coco Lopez
3/4 cup bar butter
1-1/2 cup sugar

Topping:

1/4 cup Coco Lopez
1/4 cup butter
3 egg yolks
1/2 cup condensed milk (optional)

Bake at 350 F for 30 minute.  Then add topping.  Bake for 15 minutes until golden brown.


Pistachio Bundt




3 boxes Pistachio pudding
1 yellow or white cake mix
4 eggs
1 cup warm water
1 cup Wesson oil

Mix well.  Place in greased and floured Bundt pan.  Add 3 tbsp. Hersheys syrup.  Swirl syrup with knife.  Bake 350 F for 50 minutes.

Kolachy



2 small package cream cheese
1/2 lb. butter
2 egg yolks
2 tbsp. sugar
1/2 cup sweet cream (half-half)
1 tsp. baking powder
2 cup sifted flour

Mix cream cheese, butter, egg yolks and sugar by hand.  Sift flour with baking powder and add alternately to butter mixture with cream.  Roll out and cut with a glass.  Fill as desired and pinch corner together over filling (apricot).  Bake 15 minutes at 375 F.


Pecanettes


1 pkg.  3 or 4 oz. cream cheese
1 stick or 1/2 cup butter or margarine
1 cup sifted all purpose flour
1 egg slightly beaten
3/4 cup brown sugar (dark)
1 tsp. vanilla
1 tbsp. softened margarine
dash salt
2/3 cup chopped pecans

Blend cream cheese in 1/2 cup butter until smooth.  Add flour.  Blend well and chill dough in refrigerator for 2 hours.  Shape dough in 24 1-inch balls and press into tiny muffins.  Place pans on cookie sheet.

Filling:
Blend egg, sugar, vanilla, butter, salt, pecans in small bowl.  Fill pastry cup.  Bake at 375 F for 20 minutes or until done.


Chiffon Cake



2-1/4 cup cake flour
1-1/2 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 cup cooking oil
3/4 cup cold water
1/2 tsp. vanilla
8 unbeaten egg yolks
1-1/4 cup egg white
1 tsp. cream of tartar


Preheat oven to 325 F.  Sift into mixing bowl - flour, baking powder, salt and 1/2 of the required sugar.  Make a well in flour and add the following in order: oil, egg yolks, cold water, vanilla.
Beat with spoon until mixture is smooth.  Beat egg whites and cream of tartar until stiff peaks are formed.  Add remaining sugar gradually.  Pour egg yolk mixture over beaten egg white, folding with rubber scraper until blended.  Bake for 50 minutes.


Orange Sunshine Cake


3/4 cup (8) egg yolks
2/3 cup sugar
1 tsp. grated orange peel
1/2 cup orange juice
1 cup sifted flour
1 cup (8) egg whites
1 tsp. cream of tartar
1/2 tsp. salt
2/3 cup sugar

Beat egg yolks till thick and lemon colored.  Gradually add 2/3 cup sugar, beating till thick. 
Combine orange peel and orange juice, add to egg mixture alternately with cake flour.
Beat egg whites with cream of tartar and salt till soft peaks form.  Gradually add 2/3 cup sugar beating till stiff peaks form.  Gently fold into egg yolk mixture.  Bake in ungreased 10 inch tube pan in slow oven for about 1 hour 10-15 minutes.  Invert and cool.

Neiman-Marcus (also known as Needless Markup) A very expensive store; i.e., they sell your typical $8.00 T-shirt for $50.00.

THIS IS A TRUE STORY!

My daughter and I had just finished a salad at a Neiman-Marcus Café in Dallas, and we decided to have a small dessert. Because both of us


are such  cookie lovers, we decided to try the "Neiman-Marcus cookie." It was so excellent that I asked if they would give me the recipe, and the waitress said with a small frown, "I'm afraid not, but you can buy the recipe."

Well, I asked how much, and she responded, "Only two fifty-it's a great deal!" I agreed to that, and told her to just add it to my 
tab. Thirty days later, I received my VISA statement, and the Neiman-Marcus charge was $285.00! I looked again, and I remembered I
had only spent $9.95 for two salads and about $20.00 for a  scarf.

As I glanced at the bottom of the statement, it said, "Cookie Recipe $250.00".  That was outrageous!

I called Neiman's Accounting Department and told them the
waitress said it was "two fifty", which clearly does not mean "two hundred
and fifty dollars"  by any reasonable interpretation of the phrase.   Neiman- Marcus refused to budge.
They would not refund my money because, according to them, "What the waitress told you is not our problem. You have already seen the 
recipe. We absolutely will not refund your money at this point." I explained to the Accounting Department lady the criminal statutes,
which govern fraud in the state of Texas.

 I threatened to report them to the Better Business Bureau and the Texas Attorney General's office for engaging in fraud.

I was basically told, "Do what you want. Don't bother thinking of how you can get even, and don't bother trying to get any of your
money back." I just said, Okay, you folks got my $250, and now I'm going to have $250 worth of fun." I told her that I was going to see
to it that every cookie lover in the United States with an e-mail account has a $250 cookie recipe from Neiman-Marcus...for free.

She replied, "I wish you wouldn't do this."
I said, "Well, perhaps you should have thought of that before you ripped me off!" and slammed down the phone. So here it is!

Please, please, please pass it on to everyone you can possibly think of. I paid $250 for this, and I don't want Neiman-Marcus to EVER
make another penny off of this recipe!

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz.chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)


Measure oatmeal, and blend in a blender to a fine powder.

Cream the butter and both sugars. Add eggs and vanilla, mix together with flour,

oatmeal, salt, baking powder, and soda. Add chocolate chips, Hershey Bar, and nuts.
Roll into balls, and place two inches apart on a cookie sheet.

Bake for 10 minutes at 375 degrees. Makes 112 cookies.
